Menu Monday: Eastern Salmon with Noodles

The salmon dish this week is very good and sooooooo… easy. It literally takes only five minutes preparation and was a real winner with the whole family. What more could you ask for?

This week’s menu looks a bit old-school, but the Leek & Pepper Trotilla is new to me, so that’s something else to look forward to.

Cheesy vegetables with fresh bread
Tuesday
Pizza with salad and chips (steak-cut fries)

Hearty chicken casserole with mashed potatoes
Thursday
Bean, tomato & pasta soup with fresh bread
Friday
Leek & pepper tortilla
Saturday
Baked potatoes with cheese, beans & home-made coleslaw
Sunday

Last Week’s Family Favourite

(NB: Many of our recipes have been taken from various books throughout the years, as well as created from scratch or passed down within the family. Unfortunately, I have no idea where most have come from, so if you read a recipe that belongs to you, then I’m sorry and please feel free to lay claim)

Eastern Salmon with Noodles

Serves: 4
Preparation time: 5 minutes
Cooking time: 20 minutes
Freezing: Not Recommended

Ingredients

  • 3 dstspn Soy Sauce
  • 1 tsp clear honey
  • ½ tsp Chinese five spice powder
  • Noodles, to desired quantity

Cooking

  1. Preheat the oven to Gas Mark 6/200 C/400 F
  2. Mix together soy sauce, houney and Chinese five spice powder in a shallow, oven-proof dish.
  3. Roll the salmon in the mixture so all the sides are coated.
  4. Place the salmon, skin-side down, in the dish.
  5. Bake in the oven for 20 minutes, until the fish is cooked.
  6. Prepare noodles as per packet instructions, timed to coinside with salmon coming out of the oven.

COOKING TIP This dish is nice as is, but REALLY comes into it’s own when you load some salad and cheese onto the tortillas as well.

VARIATIONS I prefer salmon fillets, which have no bones, but steaks would be fine. This also goes very well with green vegetables and a rice dish on the side.
